本研究では中・高齢者であっても体力レベルが高ければ食後のグルコース値の増加が小さいのか、また食後のグルコース値の増加率と動脈硬化の関係について調査することを目的とした。　対象者は長崎県立大学周辺の住民であり、本研究への参加に同意し、14日間の連続グルコース測定、脈波伝播速度の測定、および体力測定を完遂できた31名（男性11名、女性20名；年齢71±6歳）である。　体力レベルの中央値で2群に分け高体力群と低体力群とした。14日間の食事記録と連続グルコース値のデータを突合させ、食事による血糖値の増加を評価した。　食後のグルコース値の増加率、血管の硬さの指標であるCardio Ankle Vascular Index（CAVI）に高体力群と低体力群で有意な差を認めなかったものの、事例報告として若年者に相当する体力レベルの持ち主は、食後のグルコース増加率が最も低いという結果を得た。
