アオモジ葉の新規の機能性検索を目的としてラットを用いた摂食試験を行い、アオモジ葉摂取による生体内の生化学的パラメーターに及ぼす影響を同じクスノキ科の薬用植物であるクロモジの葉の場合と比較検討した。AIN-93G組成に準拠した純化食を対照食とし、対照食の2%をアオモジ葉粉末またはクロモジ葉粉末で置き換え成分調整した実験食を調製した。5週齢のSD系オスラットを1週間の順化した後、各実験食を4週間自由摂食させた結果、生体内の最終糖化産物の一つであるペントシジンの血清濃度が対照群に比べ、アオモジ群およびクロモジ群で有意に低下し、その効果はアオモジ群でより大きいことが観察された。それ以外の血清成分濃度（トリグリセリド、グルコース、インスリン、アディポネクチンなど）への影響は認められなかった。このことから、アオモジ葉には、クロモジ葉と同様、生体内において抗糖化作用を示すことが明らかとなり、生活習慣病予防する食品成分としてのアオモジ葉の有用性が示唆された。
