オゾンは最も高い反応性を持つ酸化剤としてよく知られている。しかも空気中の酸素ガスを原料に低コストで製造され、使用後は速やかに自己分解して元の酸素分子に戻る。殺菌消毒に幅広く用いられている次亜塩素酸塩（塩素系漂白剤）も同じ酸化剤であるが、オゾンは次亜塩素酸塩では全く酸化できない有機化合物とも容易に反応する酸化力を持つ。さらには次亜塩素酸塩の反応ではアルカリや塩類が必ず副生するが、オゾン反応では副生成物は発生しない。しかしオゾンには、常温でガス状である点や水にほとんど溶けずさらには分解しやすいという欠点もある。　本研究では、食材成分の選択的化学変換など食品分野への応用を目指して、オゾン酸化剤を活用する精密化学反応の検討を行った。従来にない本研究の最も大きな特色は、反応水溶液中でオゾンガス気泡を微細化して、ファインバブルとして反応させた点にある。水には溶解しにくいオゾンを微細なファインバブルとして反応系中で保持することで、化学当量の厳密な制御が可能になった。
