• Note (General): type:text; 3年計画の1年目である2019年度は、史料調査として、髙梨兵左衛門家史料を所蔵している千葉県野田市の上花輪歴史館に日帰りで3度、愛知県半田市の小栗宏次家（旧萬三商店）、千葉県銚子市のヤマサ醤油株式会社本社にそれぞれ1泊2日で1度、それに有限会社片口屋文書を所蔵している富山県射水市新湊博物館に2泊3日で1度訪れ、写真撮影による史料収集を行った。 上花輪歴史館での史料調査においては、現在のキッコーマン株式会社の源流の一つである大醤油醸造家髙梨兵左衞門家の近代の帳簿類を閲覧、撮影し、それらを通して関東の大醸造家が北海道や九州といった遠隔地にどのように販路を拡げようとしていたのかを検討している。 小栗家宏次家（旧萬三商店）での史料調査においては、同家史料から窺える近代日本の醤油醸造業の全国的状況が窺える史料を検討している。 ヤマサ醤油株式会社では、近代において会社独自に日本全国の醤油醸造業の調査を熱心に行っていたが、本研究においてはそうした調査資料を活用して、髙梨家と並ぶ関東の大醸造家がいかに北海道や九州へ進出しようとしていたかを検討している。日本の2大醤油産地である野田、銚子のそれぞれ大醸造家の地方進出の競合または棲み分けがどのように行われていたのかに注目しつつ研究を行っているところである。 射水市新湊博物館での史料調査においては、帳簿類の閲覧、撮影を行い、小醸造家である片口屋が、近代において大醸造家の市場進出にどのように対応していたかを検討している。このことは、地方の中小醤油醸造家が大醸造家の進出の中でいかに自己の経営基盤を維持していたかを考える上での一つのモデルケースになり得ると考えている。 本研究では近代北海道及び九州の醤油醸造業の実態を探るべく、北海道立図書館、大分県立図書館への史料調査も企画したが、いずれも新コロナウイルス蔓延拡大の影響により休館になったため、果たせなかった。3年計画の2年目となる2020年度は、新コロナウイルスの蔓延が収束次第、両機関への調査に重点を置いて研究を進めたいと考えている。 In fiscal 2019, the first year of the three-year plan, as a historical survey, we went to the Kamihanawa History Museum in Noda City, Chiba Prefecture, the Oguri Koji House in Handa City, Aichi Prefecture, the Yamasa Shoyu Co., Ltd. in Choshi City, Chiba Prefecture, and the Shinminato Museum, Imizu City, Toyama Prefecture, and collected historical materials by taking photographs. In historical materials survey at the Kamihanawa History Museum, we browsed and photographed modern books of the Takanashi Hyozaemon family, a large-scale soy sauce brewer who is one of the origins of the current Kikkoman Co., Ltd.. THrough them, We are studying how large brewers were trying to expand their sales channels to remote areas such as Hokkaido and Kyushu. In historical materials survey at the Oguri Koji family (formerly Mansan Shoten), we are examining historical materials that show the national situation of modern Japanese soy sauce brewing industry. In modern times, Yamasa Shoyu Co., Ltd. was enthusiastically researching the soy sauce brewing industry throughout Japan. In this research, using such research materials, we are considering how a large brewer in the Kanto region was trying to expand sales channel into Hokkaido and Kyushu. We are conducting research while paying attention to how the two major soy sauce producing regions, Noda and Choshi, were involved in the regional expansion or segregation of large brewers. In the historical data survey at the Shinminato Museum in Imizu, we read and take photographs of the books of the small brewer Katakuchiya and we examine how the small brewer responded to the market expansion of the large brewer in the modern age. We believe that this can be one of the model cases for thinking about how small and medium-sized soy sauce brewers maintained their own business foundations as large brewers entered. In this research, we planned a survey of historical materials in the Hokkaido Library and the Oita Prefectural Library in order to explore the actual conditions of the modern Hokkaido and Kyushu soy sauce brewing industry. In fiscal 2020, the second year of the three-year plan, we will do our research at both institutions as soon as the spread of the new coronavirus is over.
