魚は人類にとって重要な食材であり欠かせない栄養源である．特にブリなどの高級魚は未解体で流通することが多く，解体前は中身の品質・組成が不明である．そこで本研究は，ブリの食材としての局所における品質及び栄養学的組成を，解体前に簡便に調べることのできる画像解析システム（品質・組成モニタリングシステム）の開発を目的とする．この研究の第一段階として，ブリを損傷させずに中身の情報が取得可能な磁気共鳴イメージング装置（MRI）を使用し，食材品質管理及び組成評価のための情報が取得可能か検討する．
