Note (General): 和歌山県下において食育を進めるために、まず小・中学校の生活や食生活の実態調査を行った。この調査で特産果実の摂取状況、生活習慣、心身の健康状態等とそれらの地域による違いがわかり課題も明らかになった。また具体的な食育の取り組みも行った。すなわち附属小学校との食育に関する取り組みや公立小学校学校給食に地域特産果実の柿を用いて作成した柿パンを取り入れ、和歌山の柿や他の果実の学習を深めた。一方、柿そのものの良さを追求するために、カロテノイド、アスコルビン酸およびタンニンの機能性に関する実験によりその効能について検討した。
