本研究では、長崎県活性化を目指し、南島原産新タマネギの栄養機能性および呈味特性を明らかにした。試料には南島原産の新タマネギであるスーパーアップ（SU）と加津佐13号（K13）を用い、比較には七宝早生7号（S7）を用いた。抗酸化能の指標であるDPPHラジカル消去活性と抗酸化物質と、呈味特性として味覚応答を検討した。DPPHラジカル消去活性とケルセチン含量は、S7と比べてSU、K13で高値を示した。ビタミンC含量はS7と比べてK13で高値を示した。味覚応答では、S7と比べてSU、K13ともに酸味と渋味刺激が高値であり、旨味と塩味は低値であった。以上より、S7と比べて、SUとK13はともに高い抗酸化能を有しており、これはケルセチンやビタミンC含量が高いためであることが示唆された。一方、SUとK13の呈味特性はS7よりもやや劣っていることから、南島原産新タマネギのアピールポイントとしては抗酸化能が高い点が利用可能であると考えられた。
