【研究内容】2023年6～7月に予備実験として①キクイモパウダーの食品成分分析および粘度測定を行った。②8月に被検者8名に対してキクイモパウダー摂取量の違いによる食後血糖上昇抑制効果について持続血糖測定器を用いて調査した。③9月に被検者6名に対してキクイモパウダー摂取による食物の胃排出時間、食後血糖の推移を測定し、消化管における食物の排出遅延効果と食後血糖に及ぼす影響を検討した。④12月に被検者18名に対し、キクイモパウダー10gを2週間継続摂取してもらい前後の採血、採便、食事摂取量調査（BDHQ）、体組成測定を行った。【主な研究成果】②キクイモパウダー摂取及び摂取量の違いに伴う食後血糖上昇抑制効果は明らかではなかった。③キクイモパウダー添加による食物の胃排出時間も個人差が強く、被検者全体で明らかな遅延効果は見られなかったものの、各被検者における排出速度の変化と食後血糖上昇幅の変化は負の相関傾向がみられた。キクイモやイヌリンの即時的な血糖に及ぼす効果については先行研究でも一定しておらず、個人差があると考えられているが、その原因のひとつに胃排出速度変化の個人差が影響していると考えた。
