Note (General): 塩水溶液中で剛直な二重らせん構造を持つザンサンという多糖は、その剛直さゆえに少量で安定した粘性を水溶液に付与することができるため、増粘剤として食品に広く用いられている。このザンサン－塩化ナトリウム水溶液について、急激な温度変化に伴う二重らせん構造の融解および再形成過程を小角X線散乱（SAXS）、円二色性（CD）測定によって調べた。温度上昇に伴い、CDで観測される側鎖の構造変化が迅速であるのに対し、SAXSより観測される主鎖の融解はゆっくりであることがわかった。これに対し、温度低下に伴う構造変化では、主鎖の二重らせん構造形成が先行し、側鎖の構造形成には1日以上の時間を要することも明らかになった。
