Note (General)：: わが国の食品ロスは、2016年農林水産省の推計で643万トンである。これは、わが国の米の年間生産高の80%しめる。このような膨大な食品ロスはなぜ発生するのか。12年以上、食品ロスを活用したフードバンク活動に取り組んでいる筆者が、そのメカニズムを明らかにした。
