考古学的な土器残存脂質分析に特化した，日本で初めてのバイオマーカー解析，分子レベル炭素同位体測定システムを構築し，縄文弥生移行期以降の各遺跡から，キビのバイオマーカーであるミリアシンを検出することに成功した。本研究では，器種・器形分類，土器使用痕観察情報と土器残存脂質分析を組み合わせる学際的なアプローチを導入することによって，新石器時代の東アジアを特徴的づける植物性食材である米やアワ、キビ、ヒエなどの雑穀等デンプン質の穀物に対して，調理内容物と煮炊蒸炒など調理形態の復元を同時に行う，新たな研究手法を確立することができた。
We build a first laboratory for compounds-specific biomarker and stable carbon isotope analysis of lipid preserved in archaeological pottery vessels in Japan and succeeded in detect miliacin in pottery vessels from archaeological site after Jomon-Yayoi transition.Cereals consisted of rice, foxtail millet, common millet and Japanese barnyard millet, are typical starchy foods, the existence of which are characterized as East Asia in the Neolithic period. However, it was too little amounts of lipid preserved in pods, so that there has been little study done as a target of lipid analysis so far.In this study, by introducing an interdisciplinary approach combined lipid analysis with use-wear and vessel form analyses, we established a new research method to reconstruct of paleo diets together with the heating method in cooking pods such as boiling, steaming and frying. It found that this kind of interdisciplinary approach would be effective in starchy cereal cooking.
