本研究では、従来行われていなかった、人と食品との関係性に関する潜在的価値の存在やそれらを見出す手法について、カレーを対象として検討を行った。その結果、人と食品の関係についての潜在的価値の存在を示すことができ、また潜在的価値を見出すための手法の有用性を確認することができた。本研究成果によって、食品の価値拡張の手掛かりが得られたことで、食品科学工学の学問領域を広げられる可能性が見出され、従来とは異なる視点でのモノづくりが行える可能性を示すことができた。
