Analysis：: 圧搾した酒は白く濁っているが、数日すると底に混濁したものが沈殿する。成分はデンプン、繊維質、酵母、酵素などで滓(おり)という。滓が残っていると酒の香味が変化したり、酒質が劣化するため丁寧に取り除く。(Provided by: デジタルアーカイブシステムADEAC)
