Analysis：: 暖気樽(だきたる)を入れ麹が活発化し、表面からブツブツ泡が沸き立ってくる。最高温度が30度くらいになるように暖気樽に水を加えて温度調整をすると、でんぷんが糖化し甘ったるくなった液が、3～4日で乳酸菌が繁殖しやや酸っぱくなる。時々かき混ぜ泡を沈めて20日ほどで酛(もと)が熟成し、アルコール化が進む。ギ...
